A polyethylene cutting board spans the length of the True TSSU-48-12-ADA-HC prep table, providing a place to prepare meals and toppings. Ingredients for salads, sandwiches, and pizzas can be stored in the 12 sixth-size pans in the top cutout, and a stainless steel, insulated lid keeps cold air around the food pans and blocks contaminants out. Extra products can be stored in the cabinet base because it has four adjustable, PVC-coated shelves. To ease product stocking, both doors stay open past 90 degrees and close by themselves before 90 degrees to retain cold air.
The True TSSU-48-12-ADA-HC prep table has a refrigerated base with large blades on the evaporator fan, ensuring cold air is evenly distributed. Coated in epoxy, the evaporator resists corrosion, and access to the refrigeration system is provided at the back to facilitate servicing. R290 hydrocarbon refrigerant is used in the capillary tube system to maintain a set temperature, which ranges from 33 to 41 degrees Fahrenheit. Its balanced system ensures consistent temperatures in the cabinet and food pans by using guided airflow. Increasing the unit's efficiency, the condensing coil is kept clean using a reverse condensing fan motor. It blows in reverse for 20 seconds each time the compressor starts, removing dust, debris, and dirt from the coil. To reduce energy use and improve product temperature, users should continue to perform maintenance frequently.
