For pizzerias and Italian restaurants, the True TPP-AT-44D-2-HC prep table is designed for pizza making, accommodating ingredients to top pizzas in the pan rail section with six third-size pans. Product from these pans can be added to pizzas sitting on the full-length cutting board, and storage space for more product is available in the base, which is made up of two drawers. Each drawer has a 12-inch-long handle and can accommodate two 12-inch by 20-inch by 8-inch-deep pans.
This True TPP-AT-44D-2-HC pizza prep table uses R290 hydrocarbon refrigerant—an environmentally friendly alternative to traditional refrigerants. Set by the operator to suit different product types, the temperature stays between 33 and 41 degrees Fahrenheit. Airflow in the unit is guided to ensure the pan rail and drawer sections are evenly cooled. To keep the cleaning coil clean, a condensing fan motor operates in reverse for 20 seconds upon compressor start up. This helps to blow dirt, dust, and debris off the coil to lengthen the unit's lifespan and provide ideal product temperatures. To ensure best results, the coil should be maintained regularly.
